In Carrù, in the countryside on the outskirts of the Langhe, Redibis is a little restaurant that delights guests' palates with traditional and elegant dishes.
In Carrù, immersed in the peace of the countryside, where the eye can roam between the hills of the Langhe and the chain of the Alps, lies Redibis, a little restaurant that makes the most of local ingredients in a characteristic, rural setting. Guests are welcomed into a typical Piedmontese farmhouse, with exposed brick ceilings and traditional furniture, in a place that smells of home and friendship. The restaurant’s chef and owner, Silvia, devotedly prepares dishes that she describes as “elegantly traditional”, for cuisine that respects classic recipes and sometimes revisits them.
There is no shortage of quintessential Piedmontese dishes, such as vitello tonnato, tajarin and ravioli del plin, and, in winter, Bollito Misto di Carrù (a selection of boiled meats), served in a soup tureen with hot broth; ending with a delicious sweet treat, hazelnut cake served with zabaglione. A glass of the area's fine wine pairs well with the flavours of the dishes. For those who wish to extend their stay, there are also two rooms available at the adjoining Locanda del Cuore.
