The Restaurant Palas Cerequio is operated by Michelin-star chef Damiano Nigro and is the first re-sort dedicated to Barolo crus. Surrounded by vineyards, the restaurant offers basic yet elegant dishes masterfully prepared with attention to the tiniest detail. The traditional local cuisine combines with haute cuisine on the basis of three principles: top-quality ingredients, seasonal dishes, zero waste. It’s a philosophy of accuracy which epitomizes creativity and an unconditioned respect for each and every ingredient. The maitre d’, Elena Boffa, who is the chef’s partner, supervises the impeccable table service.
The impressive wine list boasts over 1,000 labels from the well known Caveau of Barolo: let sommelier Roberto Stroppiana together with Gabriele Faccin suggest the best wines for your table. When sunny and warm, tables are set outside on the terrace with a breathtaking view of the hills.
