A symbol of local bread-making traditions is the “Oven of Good Bread” of Roberto Marcarino, who has made history in the profession with his use of organic flours, natural leavening techniques and the wood oven. Every day specialities including linseed, walnut and olive breads and hand-made grissini are baked using organic products, starter doughs and stone-ground flours for allergy-sufferers, including emmer, kamut and rye.
